Changing the diet on CBC's Weekend Morning Show

This morning, on CBC's Weekend Morning Show with host Terry MacLeod,  I presented the following recipes that have been adapted to Low Glycemic Index ingredients to benefit people living with diabetes.  

Curry leaves can be purchased at Dino's Grocery Mart on Notre Dame, Dong Thai groceries on Notre Dame, Young's (three locations), Lucky's, etc.


Eggs, Potatoes and Cauliflower

There are a number of steps in preparation but its really worth clearing the preparation space, getting the mise en place all ready and going ahead with this recipe. This dish can easily be made ahead of time and reheated. Vegans can enjoy this recipe without the eggs. The addition of sweet potatoes or yams makes this more friendly for living with diabetes as the long fibres break down slower, thus preventing peaks in blood sugar.  This would also be perfect for Passover.

1 head cauliflower
1 cup UNSWEETENED coconut (original recipe called for freshly grated)

Game Day foods or any day, for CBC's Weekend Morning Show

Yesterday, I brought in "Game Day" foods ideas for CBC's Weekend Morning Show with host Nadia Kidwai.  I was inspired by Manitoba producers and some great options, so I made Manitoba Reuben Sandwiches with Old Church Bakery Sourdough Bread, Manitoba Beef Montreal style corned beef, instead of sauerkraut, I used Cook's Creek Kimchi.  For the other dish, I used Wild-Caught Argentinian pink shrimp with two dips, a Wasabi Sour Cream, and a Korean seafoods dipping sauce. 

I used this particular shrimp because they are very tasty, easy to use, and, very importantly, are sustainable both environmentally and ethically.  That is, they are Fair Trade and use no slavery in the catching and production of the shrimp.  Ask your fish monger about other such products.

For each sandwich:
2 slices Old Church Bakery Sourdough bread
mustard
Emmenthal Cheese, sliced
Cook's Creek Kimchi

It is a honeyed life on CBC's Weekend Morning Show

This morning on CBC's Weekend Morning Show with interim host Nadia Kidwai, I presented dishes that featured honey.  Please support both the bees in our Manitoba environment, when considering the impact of cosmetic pesticides on human and environmental health, and consider the bee keepers and their hard work to produce excellent honey for our enjoyment.

The gorgeous cutting board is made locally by Silverbirch Designs. 



1.Honey Miso Grilled Chicken Thighs

1 inch fresh ginger, minced
3 tbs miso
1 green onion, finely chopped
3 tbs honey
3 tbs Mirin
a drizzle of chili oil
4-8 skinned and boned chicken thighs

Combine first 6 ingredients until well blended. Mix with the chicken pieces and let marinade for at least one hour. Grill, broil or sauté until done, about 4-8 minutes per side, depending on the thickness of the chicken. Serve immediately or enjoy cold.

Steelhead trout on Brown Butter Greens on CBC's Weekend Morning Show

I'll be presenting the following recipes on CBC's Weekend Morning Show with host Terry MacLeod, tomorrow morning after the 8:30 news.

We have lovely Steelhead Trout, from Watersong Farms, in Warren Manitoba.  It is available fresh each Friday at Gimli Fish.  They produce gorgeous Steelhead trout that looks and tastes like buttery salmon.  

The Spinach, for today's recipe, came from Fertile Farm, Manitoba and their wonderful produce is available at the St. Norbert's Farmer's Market. 



Pecan Crusted Steelhead Trout on Brown Butter Greens

1 fillet Steelhead Trout
1/2 cup pecans, finely chopped
1 heaping tablespoon pesto or 2 tbs chopped fresh herbs and garlic
1 egg
salt and pepper
drizzle olive oil

Place fillet on a baking sheet that has been lined with parchment paper or aluminum foil, for easy clean up.  Mix topping ingredients together and spread over fillet.  Bake at 350ºF for 10-15 minutes, depending on the thickness of the fillet.

Serve immediately over Brown Butter greens…

Local Beef Shank Osso Bucco for CBC's Weekend Morning Show

This morning I presented the following recipe for CBC's Weekend Morning Show with interim host, Nadia Kidwai.  The beef shank is a beautiful product, full of flavour, and this recipe is easy to prepare.  The trick to this and most recipes, is to prepare your Mise en Place, or, have everything ready to go.



Osso Bucco:
1 cup all-purpose flour
Sea salt and freshly ground black pepper
4 pieces Beef Shank (I used Wildfire Farms and Manitoba Beef shanks available at St. Norbert's Farmer's Market)
Extra-virgin olive oil
3 tablespoons unsalted butter
1 onion, diced
1 celery stalk, diced
2 carrots, diced
1 lemon, zest peeled off in wide strips with a vegetable peeler
1 head garlic, cut horizontally through the middle
2 bay leaves
1/4 cup chopped fresh flat-leaf parsley
1 sprig fresh thyme
1 bottle dry red wine
1 (14 1/2-ounce) can low-sodium beef broth (I had homemade chicken broth on hand instead)
1 (28-ounce) can whole San Marzano tomatoes, hand-crushed (I used 6 frozen garden grown Roma Tomatoes…

Avocado Toasts and Miso Soup for CBC's Weekend Morning Show!

On Saturday morning, I'll be presenting the following dishes for CBC's Weekend Morning Show with host Nadia Kidwai.  It is difficult to imagine Spring today, but Avocado toasts will feel more summery.  I'll be using wonderful Sourdough bread from Old Church Bakery.  I'm also making the Avocado toasts at the market for sale!  They will be topped with Radish sprouts from Fresh Forage, also available at the St. Norbert's Farmer's Market!



Avocado Toasts
Really?  A recipe?  Mash or slice up an avocado on toast and season how you might like.  Spicy, shrimp, fried egg, herbs, green onions, etc.  Key is, the great bread from Old Church Bakery!

Miso Soup
1 ~ 5X8" sheet of kombu (available at most Asian grocery stores, such as Sun Wah, Oriental Market, etc.)
2-3 cups Bonito Flakes (available at most Asian grocery stores, such as Sun Wah, Oriental Market, etc)
1/2 -3/4 cup Miso paste (availability, see above)
1 bunch chopped green onions
