Coffee Marinated Hangar Steak for CBC's Weekend Morning Show

This morning, I had the pleasure of presenting Coffee Marinated Hangar Steak on CBC's Weekend Morning Show with guest host, Laurie Hoogstraten.  

Coffee Marinated Hangar Steak

2 cloves garlic, chopped
1 1/2 cups strong coffee, room temperature (I used Ethiopian Yergicheffe, from Green Bean Coffee, with notes of cocoa, available at St. Norbert's Farmer's Market)
2 tbs favourite spice blend (I used Ras el Hanout, but Mitmita, and others would work nicely)
1/4 cup Dijon mustard
1/4 cup light brown sugar
2 tbs. olive oil
1 small shallot, chopped or grated
1 Hangar Steak  (Available at Wildfire Farms at St. Norbert's Farmer's Market)
Kosher or sea salt, to taste

Whisk shallot, garlic, coffee, mustard, brown sugar, oil in a medium bowl.  Pour mustard into a resealable bag and add the steak, seal the bag and coat.  Marinate at room temperature for an hour or refrigerate overnight.

Turkey Schnitzel and Roasted Tomato Coulis for CBC's Weekend Morning Show

This morning I am featuring a simple dish to prepare that is full of great summer flavour CBC's Weekend Morning Show with host Nadia Kidwai.

The basil and tomatoes are from Almost Urban Farm, and available today at the St. Norbert's Farmer's Market. The roasted tomato coulis is very easy to prepare and can be used in many ways.

For the Schnitzel:
1 Turkey Breast (I used a local free range turkey that I cut into parts and the breast was large enough for more than 5 portions)
1 egg
1/4 tsp grated nutmeg
1/4 tsp smoked paprika
Salt and pepper to taste
1 cup Panko bread crumbs *
1/2 tbs butter (I used Notre Dame butter, local)

* Panko bread crumbs available at many Asian groceries


For the Charred Tomato Coulis:

2-3 medium tomatoes (available at St. Norbert's Farmer's Market)
2-3 cloves garlic, minced
1 tbs fresh basil, chopped (available at Almost Urban Farms at St. Norbert's Farmer's Market)
salt and pepper to taste
1 tbs olive oil

Don't throw those veggie tops away! On CBC's Weekend Morning Show

This morning, on CBC's Weekend Morning Show with host Terry MacLeod, I presented the following recipes with items that many people throw out.

Last year, I encouraged cooks and people who love things from the garden and farmer’s markets to not throw radish leaves away. I have a couple of recipes for them on my blog. Now, I see people throwing carrot and beet tops away. These delicate leaves are delicious and so easy to make into many dishes.

Carrot Top Pesto

1 bunch carrot top greens, chopped (today from Almost Urban Farms at St. Norbert’s Farmer’s Market)
2-3 bunches basil (or chives, cilantro, etc.) (Fresh today from Reimer’s at St. Norbert’s Farmer’s Market)
3-5 cloves garlic
¼- ½ cup parmesan reggianno or Padano
½ cup walnuts (or almonds or pine nuts, or, pumpkin seeds)
1 (+/-) ground black pepper
Olive oil

Fennel from Fertile Farm is Fabulous on CBC's Weekend Morning Show!

Yesterday I had the pleasure of presenting two ways to prepare fennel on CBC's Weekend Morning Show with Nadia Kidwai.  Fennel is surprisingly versatile and we can get it grown locally at St. Norbert's Farmer's Market at Fertile Farm.  They have such a wonderful variety of locally grow produce and are a wonderful newcomer family from China.

The first recipe is en pappiote, or cooked in paper.  This is so easy and you can make this in a toaster oven.  The Steelhead Trout comes from Watersong Farm, in Warren, Manitoba. This gorgeous fish is available each week at Gimli Fish.  They will also be coming to the 201 Portage Ave. Farmer's Market on Friday's!

1.Simply take a fillet and cut into portions, place on the parchment paper and top with your favourites.  Here, I topped the fillets with shaved fennel bulb, chopped fennel fronds, butter, and salt and pepper.  Bake at 350ºF for 10 minutes.  Serve immediately.  It will be a present at each setting!

A flight of Manitoba Honey on CBC's Weekend Morning Show!

Yesterday, on CBC's Weekend Morning Show with host Nadia Kidwai, I presented the some of the wonderful honey that we have in Manitoba.  The bees and the honey producers work very hard to provide us with this wonderful product.  There is a great range of flavours, due to the different flowers that the bees access. 
 Featured above, at the CBC Studio are:  Ferris Farm Creamed Honey (Downtown Hydro Market, Wolesley Farmer's Market), BeeProject Apiary North End and St. Boniface Neighbourhood Honeys (BeeSpace @ 196 Osborne), Giguere Honey Farms Creamy Cinnamon, Wildflower, Dandelion, Natural, Creamed, and Buckwheat Honeys (St. Norbert's Farmer's Market, Argy's Records).  Not shown, Phil's Honey.

Quinoa Stuffed Zucchini
1 large zucchini, halved and sliced lengthwise, cutting out centre marrow
Centre marrow of zucchini, chopped
2 shallots, sliced
½ green or red pepper, finely chopped
1 tomato, diced
2-3 cloves garlic, minced
1 tbs Turkish Baharat
Olive oil
Pinch salt
5 fresh dates, pitted
1 tbs good tomato paste
¼ cup wine, tea or juice, to deglaze
1 cup cooked quinoa
Options: chopped mushrooms, green onions, chilies

Preheat oven to 350F. Bake zucchini pieces with a pinch of salt and a drizzle of olive oil, until almost soft. Prepare filling.

In a medium saucepan on medium heat, heat olive oil and add sliced shallots and minced garlic. Add remaining vegetables and cook until soft and most moisture is cooked out. Add all seasonings, dates and tomato paste. Deglaze and cook until soft. Mix in cooked quinoa. 
Spoon filling into zucchini pieces and bake until crisp on top and zucchini is soft. Serve hot, cold or warm.

Pa kimchi, Green onions kimchi LOVE!! Chonggak-kimchi, Ponytail Kimchi More LOVE!

Today is a Kimchi making day.  I started with the most simple kimchi to make and it has wonderful results.  Pa kimchi, or, green onion kimchi has a sweetness that is subtle and lovely.  It is a wonderful side dish or garnish to so many foodss, stir-frys, soups, etc.

I used the green onions, except for the whites and purples, from my Farm Share from Hearts Acre Farm.  If you don't have a CSA Farm Share, you can pick up their wonderful veggies at St. Norbert's Market on Wednesdays and Saturdays.  The remaining ingredients are available at a number of Asian Specialty stores throughout Winnipeg.  Try Arirang Oriental Food Mart on Portage Ave. or 88 Mart on Pembina, in Winnipeg.

Quinoa Sweet Potato Veggie Burgers (adapted from Bonappetit, January 2019)

1 small sweet potato
6 tablespoons olive oil, divided
Kosher salt, freshly ground pepper
1 portobello mushroom (or 5-8 crimini mushrooms)
½ small zucchini
1 small shallot, finely chopped
¼ teaspoon crushed red pepper flakes
1 cup cooked quinoa (from about ½ uncooked) (Tamarack Farms available at St. Norbert’s Farmer's Market and Downtown Hydro Market)
¾ cup dried breadcrumbs (panko)
1½ teaspoons fresh lemon juice
4 Pretzel or Sourdough Brioche (Available at Old Church Bakery at St. Norbert’s Farmer’s Market
